Hydrocooling is used for many fresh market products, including many types of tree fruit, melons, root vegetables and stem vegetables.
This method is never used for grapes, cut flowers and most berries because the surface water left after cooling encourages decay.
The main types of hydrocooler are water shower and product-immersion designs. In the first type, water is pumped above the product and rains down past it.
Produce in containers or unpacked product moves slowly and continuously through the shower or produce in containers can be loaded as a batch in the cooler.
